The "ILH" Hygiene Laboratory
This modern analysis process guarantees an excellent plant hygiene,
which also fulfils all legal requirements in the food processing industries
e.g:
Bakeries
Meat processing plants and butchers' shops.
Restaurants, Hotels, Canteens
Take-away and other fast food operations
The primary objective of this extensive project was to develop a technique,
which when strictly adhered to, would simplify the daily cleaning process
on the one hand, and on the other reduce costs of labour and cleaning
materials by approx. 50 %...
The Institute of Food Hygiene in Berne (ILH), together with the chemical
industry and a leading industrial laboratory for microbiology, have developed
an ideal solution: The Hygiene Concept 2000.
four year test and development phase was a complete success. In the
meantime the Hygiene Concept achieved market maturity in the summer of
2000 and since then has been very successful.
The process of implementing the Hygiene-Concept 2000 is divided into
three different phases:
a) Microbiological plant analysis
According to size of processing plant, bakery, hotel kitchen etc.
12 -36 microbiological test samples are taken from predetermined plant
installations and machinery. The contaminated nutrient cultures (mediums)
are forwarded to the central laboratory for further examination the same
day.
After evaluation of the microbiological analyses by the laboratory of
the Swiss Inspection Service, the results are immediately forwarded to
the ILH. This institute then creates a special plant grid based on these
results. With the help of this grid, it becomes possible for the first
time to recognise and locate quickly the origin of microbiological contamination
in food processing plants and enable immediate enforcement of corresponding
preventive measures. 
b) Reporting and Preparative Compounds
A written report with the results is sent to those persons responsible
for the hygiene in the food processing plants in question. In the
case of tests with poor or even bad results, the ILH recommend an
H-cure, which consists of three different compounds with varying active
agents. These agents, which have been especially developed by the
chemical industry, are then integrated alternatively into the daily
cleaning process and added to the usual cleaning products. The resulting
optical effects are just as impressive as the chemical process involved,
when using these agents - a perfect plant hygiene conforming in all
respects to legal requirements. Betriebshygiene!
c) Final check and systematic monitoring
An additional microbiological plant analysis, which is free of
charge for the customer, is carried out after approximately 12 weeks
and the results evaluated. In the event of poor results, the ILH special
measures are recommended. A specially compiled catalogue includes
various measures, which without doubt lead to a correct plant hygiene.
